We were very excited for the experience at Dier Makr, it seems we may have come on an off night.The menu was interesting, beautifully presented and explained by the staff. Alcoholic and Non-alcoholic drink pairings were also interesting and quite enjoyable.We found most courses to be less exciting than you'd expect for a $230 (pp) meal.The decor is simple, with a retro vibe.We were rushed to our seats (we were on time) and nobody offered to take our coats when we arrived, other guests had theirs taken. The service slowed down dramatically towards the end of our meal. It looked as if the staff were packing down for the night and were distracted. The waits between the final three courses felt exceptionally long.The restaurant is located on top of a nightclub, so if you book a late sitting (9pm) there will be loud, clearly audible dance music coming through the floor, and you'll feel the music through the floor and your seat. This combined with the venues music and the music bleeding through from next door makes for a distracting and unpleasant cacophony of music that made the latter half of the meal hard to enjoy.It's unfortunate our experience was not as good as others here. Especially considering the price tag. There are far better culinary experiences in Hobart for less than half the cost of this one.

Thank you for an amazing night and incredible experience. Chris was a superstar as he guided us through the well thought out menu and matching wines and sakes. Decor was simple, elegant and retro all thrown in. The attention to detail from the cutlery, pottery and not to forget Dawns tomatoes / quails eggs were on point. Love, love!!

Lovely intimate dining experience. They serve a simple yet refined set menu which absolutely celebrates the high quality produce of the region. Very unique experience. Staff were friendly and gave insightful comments accompanying each dish. Highly recommend this restaurant!

Impeccable course of food complimented with exceptional service. Dier Maker is next to Lucinda Wine Bar I visited earlier during the week.Every course of the meal is made with local produce. This alone is already quite a unique experience. We had wine pairing with the course.With every plate and wine pairing there is an explanation to them. It is a pleasure to hear the introduction. The lady was also passionate about what they put on the table.Dier Maker is in a bit pricey range so it may not be for everyone. However, I thoroughly enjoyed it and I don't regret this amazing experience.

Impeccable, faultless meal. Every course was amazing. Fantastic service. Visited on Friday and the food was amazingly fresh and flavourful, and the matching wines and sakes equally so.Would love to return if we get back to Hobart again - recommend.

Great food and staff. Did the wine pairing which was very complimentary. Definitely on the more expensive side of similar degustations I have done. Everything was delicious but nothing blew my socks off.

What did we eat? No literally we have no idea. We were so pleased our good pal gifted us a gift voucher to dier makr and we were looking forward to it for months. Staff were friendly, great vibe and ambience. Yet honestly were let down with the whole experience. Out of all the dishes only 2 were great, the rest average and a couple downright disappointing. The cheese and peas (first pic) was the best. Definitely not worth $350 - save it and go elsewhere. Kind of felt more conceited than celebrating and showcasing local produce. Not sure if it was a bad night, similar faces with similar experiences in the dining room. At least we got to experience it and look forward to tasting more of Hobart's restaurants!PS if you're gonna serve Japanese inspired dishes like gyoza and chawanmushi you might want to do them justice, especially when you have japanese guests and get better gyozas in a shopping centre food court.
