You know when you want to try something other than McDonald's or servo food? Last night, this was me. The home made chips" sign sought my attention

This is a Fish and Chip shop and so much more. The chips are the best in South East, fish is fantastic, burgers; the choices are outstanding - go for the works. And the customer service is absolutely brilliant. Friendly, open and welcoming. Did I mention their breakfast menu, mouth watering crispy bacon, eggs your way anyway, beans, sausages and lovely chunky toasted bread, and wash that down with a hot cuppa coffee. My wife and I come back simply because, why not. Location, location and all the good things to enjoy, great service, great cuisine, 5 stars and 10 out of 10 in my book.

The homemade chips here are good. I've had them a few times before. Cooking the chips the way the customer asks is always a good idea. I've tried many takeaways over the years, always in search of people that know how to cook. There have been four that fit into that category and three of those businesses have since been closed or sold on to be taken over by people who seem to have little to no idea about cooking decent deep fried food. They're all about the seafood (which I cannot have) and the chips are like an afterthought. These takeaways and others have tried to pass off a burnt offering as food, or have ignored simple requests like cooking the chips a bit longer for more crunch or putting extra salt on therm. Maybe those owners back then failed to realise that It's not about how they would like the food to be prepared because they aren't the ones who are eating it.Anyway, this particular time I was the only customer in the shop so this time I asked for the chips to be cooked a bit longer. Well, they were presented after only a few short minutes, wrapped in paper, no ventilation of any kind. I opened them in less than a minute but when hot, non battered* chips are wrapped in paper this way, it immediately smothers them and within a few seconds, there is nothing crunchy or even remotely crisp in there except the few little bits that survive the oil getting drained from the basket. They weren't cooked the way I asked because they weren't in the oil long enough. The burgers sound lovely and are no doubt tantalisingly delicious, but they're too expensive for my small income. In any case, all I'm interested in and all this review is about, is the chips.Perhaps they just didn't hear me ask, although the order was heard no problems. My voice is very loud in my head when I talk which at times causes me to talk softly and I don't notice this until someone tells me they can't hear what I'm saying. So more likely there was a misunderstanding, or miscommunication on my part, which still leads me to;This second part that applies to any takeaway food outlet owner who also may be reading this. I've been eating chips of all kinds from homemade, to fries, to battered with different batters, to steakhouse cut, to wedges (which these seem to mostly be here) and other deep fried potato products and I've been doing this for over 40 years now. It seems there are precious few takeaways left that can cook decent chips. Majority now use battered frozen chips that are scorched in oil far too hot and then presented a few minutes later. It's all rush, rush, rush. It takes time to prepare chips properly. I know homemade chips are mostly cooked before the final frying. They have to be or each customer would have to wait about an hour for their food. I'm grateful for there being a takeaway that still does this the traditional way. There are almost none left. All I need from all fish and chip type takeaway food shops anywhere, is when taking my request to listen to what I ask for. It's okay to leave the chips in the oil a few extra minutes. It's okay to put more salt on them. It won't harm them. After all, you're preparing the food to my liking, not yours and remember who's paying for it.* All chips will become soggy when wrapped this way. It's the homemade style that go the quickest. They should never be covered in anything except your favourite salt, sauces and other condiments. There are frozen chips that try to give crunch with a batter coating. They dont even come close to starchy potatos

Dropped in for some Burgers and chips. Was very satisfied with size, fillings etc but best of home made hot chips are how they used to be with potato chips not cut up all uniform as fries, more like wedges. Yum-o.
