The Guild - Italian Restaurant & Cocktail Bar
This was an absolutely sublime epicurean delight to discover in this small town. The Italian owner has one of the best Italian wines selections in any restaurant I have seen in Australia, there are some real gems on the list. We had the Alta Mora and it was just a superb choice to pair with our Pizza. These are no ordinary pizzas either. They are finely crafted incredible flavour compositions and out of the three we shared it was hard to choose a favourite as they were all delicious! The desserts were also amazing and hard to choose a favourite between the panna cotta and the new as yet unnamed biscuit and sponge and cream dessert. We rolled out of here so satisfied and feeling like we had just enjoyed one of the best Italian meals we have had in decades (and that includes the ones enjoyed jn Italy too).

We found this beautiful Italian restaurant whilst staying at Lake Cajole. A warm welcome and friendly service. A well thought out menu and a fabulous wine menu. It is immediately noticeable that a lot of consideration went into both of these. Yes, it is not a kids friendly menu and we had our 10yr old and 4 yr old in tow. But the star's aligned because the 10 yr old gave the Kingprawn Ravioli a 10/10 and the 4 yr old shared my Tagliatelle with Lamb Ragu. Plus a generous helping of the fabulous bread basket with warm olive oil! The wonderful waitress even sorted a 'fire engine' for the kids with pomegranate juice and lemonade. Overall we will visit again, kids will be older and life goes on!

Milton wasn’t the place I expected to have a faultless Italian dinner, but that is exactly what The guild. delivered. Five years after my last visit, with a new chef at the helm, this restaurant has really found its groove. From the compact menu, wood-fired rock oysters ($28/6) arrive warmed (not cooked) tasting of both land and sea with a black truffle balsamic and Italian pancetta combo that improves upon Kirkpatrick. Bubbling lime foam adorned with a squid ink coral crisp hides a barely cooked scallop ($5/each) in a parsley and soy reduction. The combo. allows you to really taste the translucent bivalve gently warmed through by the wood-fire grill. The friendly floor team upsold us a bread basket ($8) that turned out to be the best decision ever. Organic flour made the three-stroead selection sing against country butter. It was also perfect for mopping up seafood the whacky kohlrabi ravioli ($23). Using creamy raw prawns, passionfruit, lime and ginger laid over discs of kohlrabi with the bisque poured upon serving, this dish was both unique and intriguing.Pizza—in our case the white-based ciccio bello ($26) with pancetta, salami, chilli, basil, black truffle and pockets of creamy mascarpone—here remains well-executed. However I was more besotted with the artful tangle of spaghetti “allo scoglio” ($34) where minced seafood and king prawn hunks joined freshly made egg spaghetti in a simple syrupy sauce that allowed the other ingredients to speak. Teamed with a well-priced selection from the wine list—the 2017 Jones Road Chardonnay ($59) from the Mornington Peninsula—this was a meal beyond the calibre I expected to find in Milton. Bravo!

If you have seen my reviews before you will know, I do not exaggerate. Lucky for us all that people like Stephano want to share their national pride with those who may never have heard much about Milan or been there.Welcome to my new day: I was there many years ago, pregnant & eating the most sublime soft fresh buffalo cheese from Southern Italy which had arrived as if it was the morning mail, at breakfast, for the luncheon menu.My hosts were providing an international cultural experience for my best friends brother. We, his family and me, the family tick were guests (so I got to experience Italian hospitality). Now, you don’t have to go further than Milton as Stephano (who owns ‘The Guild’ in Minton has made an authentic Milanese restaurant for you.Complete with excellent wait staff and clever imaginative competent chef: this place is good, very good!Tender, delicious & succulent lamb cutlets sculptured on the plate served with a bevy of colours & flavours to delight both the palate and eye.The wine I had was a WA pinot noir which complemented the main meal.I prefixed the cutlets with scallops: very healthy and yummy. No room for more! All great.

Ordered two pizzas to takeaway, they were two of the best pizzas I've ever eaten anywhere in the world. The pumpkin special that was recommended to me on the phone was interesting and absolutely delightful. Also love that the owner fires back at rude reviews on here, if I could give you an extra star for that I would.

The manager/owner who is generally serving people constantly makes us feel very uncomfortable. He pretty much wrecks our experience every time we dine here with his unnecessary and strange comments. Pizza is amazing however and that is the only reason why we keep going back!
