Went to the restaurant not the hotel....Half the price of what you would pay in Sydney for this quality of a fine dining experience. Even if it was twice the price it would still stand on its own thanks to thoughtful wait staff and wise senior staff overseeing things coupled with great preparation of some great quality produce without any sense of ego or pretentiousness. Just tell them what you like and they make it happen, ask for suggestions and trust their choices.I would not hesitate to recommend it as a top tier modern Australian restaurant.You can argue the pecking order it you like....but I think this place would hold its own with the finest I've experienced.

Two thumbs up! A bit pricey, but very nice modern cuisine. One of the best raw oysters I’ve had in Straya. Takoyaki-inspired octopus was a bit on the spicy side but good. Wallaby was a pleasing surprise. Highly recommended!

Definitely one of the best! Food was soooo good. It ruined me for all other Tasmania restaurants. The food I had was comparable to the quality of the French Laundry--it was that good. (Get the scallops!)

Stillwater restaurantSuperb restaurant and hotel accommodation in Launceston. Stayed here as a couple in a beautiful room.Service was superb from start to finish.Shower & bathroom great. Bedroom pretty spacious. Lovely view out over the river estuary.We ate downstairs in the private room with friends. Excellent food and wine. As we were leaving early the hotel even delivered breakfast to our room. We would highly recommend.

Absolutely outstanding - a must for foodies!This restaurant is situated in an 1830’s flour mill and overlooks the Tamar River, providing a beautiful setting for an amazing feast.From the moment we arrived the staff were attentive and professional - we seriously did not want for anything at all!Thankfully we had reviewed the menu online prior to ordering (as we may have been there all night deciding!). We decided on the Steamed King Prawn Dumplings, House Gnocchi, Cape Grim Beef Tartare, Cressy Lamb Rump and a side of Roasted Broccoli (full description with pic’s).Each dish was without a doubt made to be savoured! You could taste the individual elements and knew that care had been taken with the ingredients. If we had to choose, the gnocchi was probably our favourite, but to be honest all dishes were outstanding - there is a reason why this restaurant has received so many awards!Only small suggestion, bring a jacket. It was surprisingly a bit fresh and most diners around us still had their coats on so something to prepare for.Other that, special occasion or otherwise, make sure you try Stillwater!

Beautiful location for a quick lunch in the wine bar. We didnt have a booking in this busy restaurant but were easily catered for. Ordered 3 tasting plates. All extremely tasty and beautifully presented. Our waiter was amazing and the view over the water was just lovely. Thank you for the great experience

I haven't stayed at the accommodation.Stillwater is one of my favourite restaurants in Tasmania. The food is generally well prepared, beautifully presented and delicious. Except for the coconut pannacotta, which was unpalatable. I don't know whether something was wrong with it or if it was meant to taste like that, but it was strangely bitter and an extremely unpleasant way to end the meal. I recommend the chocolate dulce de leche tart instead.
