Want to know where to dine in Tasmania? Come with me to visit one of Hobart's top restaurants, one of my favourites, @institutpolairetasmania where the beautiful seasonal menu showcases the best local produce and beautiful creative dishes.Starting with a glass of chenin from Sanskrit wines with some beautiful tassie oysters with yuzu pearls. We then began the seasonal menu, a beautiful bottarga toast on fluffy focaccia and a sea urchin eclair. Then we had super plump Hokkaido scallops on cloudy soft milk buns with caviar and miso butter. A fresh acidic heirloom tomato salad followed by a beautiful spanner crab linguine and a Cape grim beef fillet cooked perfectly. A super smooth palet cleansing sorbet and finally this magical yuzu Meringue tart where the Meringue floated on top of a clear yuzu jelly.Really a first class experience all the way. Reservations are required. Book in advance and do not miss this restaurant.#finedininghobart #hobartrestaurants #institutpolairetasmania

Great dining experience. We opted for the seasonal tasting menu (6 dishes, all at the table need to select the option). They accommodated a slight change to one of the dishes happily.

Great sharing menu prepared with care. Nice and cosy and attentive wait staff. The bar was uncomfortably warm and stuffy on Valentine’s Day wished they had conditioning. Their cocktails are among the tastiest we’ve had as they tend to be hit and miss at other places we’ve been - these were delicious. Their rendition of beef tataki wasn’t what we expect as the beef were very cooked (expecting a much rawer rendition). The dish I least enjoyed was the butter poached leeks - I don’t imagined I’d ever pay 15-20 dollars for 1-2 slices of leek, but everything else was nice.

So so , amazing drinks list and decent service but the food was hit and miss . The snacks could have been so much more if they were served warm . The tomato dish was awesome because the tomato’s were awesome nothing to do with the chef’s influence. Steak was a great dish the rest was so so . Fashion before function not worth the $$$ . Tasmania serves better on street corners , nice place for a drink and a snack don’t bother with the tasting menu

Amazing, amazing, amazing! Easily one of the best dinners I had during my trip to Tasmania. The food was delicious and cocktails absolutely yummy (really loved cocktail Aurora and Salty Dog). Nav and Louise were also lovely hosts that evening. A definite must-visit if you're in Hobart!

If you are a big fan of Tasmanian gin, this place is a must. 4 of us came there for the gin tasting, but ended up finishing almost the whole snack menu and many of their cocktails. We went there on Sunday so we had the special pork katsu sandwich as well. It is definitely the best one I have ever had in awhile. We came back for their seasonal set menu to celebrate our anniversary last month. The food was absolutely beautiful and tasty. That story of local white asparagus they served recently made me feel special to be a tasmanian residence. The handkerchief mushroom is surely an art, and the eye fillet is the star of the night. And believe me, you can never go wrong with any of their cocktails. I had the gin bramble and my partner had a manhattan which is always the best one he has around Hobart. The atmosphere, the service and the food were exceptional.Institut polaire is a must try in Hobart.
