I worked in a training kitchen with students from Cordon Bleu. The kitchen was a bistrot (The First Course) serving the public. Half of the cohort of students showed up for work each morning with filthy uniforms. They did not wash their hands on entering the kitchen, on changing kitchen tasks and on returning from the toilet as is strictly required by food preparation rules. They fiddled with their mobile phones throughout and then returned to handling food. I would never eat what was served to me by students of Brisbane's Cordon Bleu
