Cocktails... These guys are the experts! Their menu is fabulous, and they can also do anything else you ask for! If you don't care for cocktails, they also have the biggest spirit and wine list I have ever seen. Fabulous vibe and great service

This was a great experience. We only stayed for drinks and a round or two of 500(our cards)We stumbled across this establishment after a big day out, and it was great to unwind, low lighting soft plush seats and a HUGE whiskey selection. I loved the prehistoric collections spread about, it's very engaging.

Absolutely love this bar, so far my favourite in Hobart.Well-designed menu with all kinds of drinks. The staff are happy to make the drinks based on your personal preference. My friend and I had a great time there. The staff were super friendly and passionate about explaining the drinks to us. I had Spring Rose, which I loved - a little sweet, fruity and refreshing. The fossil inside the tables is quite interesting to read.

Good drinks, the service not so much. Took over 40 minutes for our plates to be cleared and we had to approach the bar for extra drinks despite clearly being done with our current ones and it not being busy. Disappointing, especially given the price we paid for our night out. Won't come back in a hurry. Selection is good which is their only saving grace.

Went last night with my partner as we we're staying at the Macq01 Hotel.The atmosphere was very inviting and we were seated quickly.Didn't take us long to decide what food and drinks we were going to have but after waiting around 20 minutes for someone to take our order we got up and left.Around us there were only two tables and a small group doing a whiskey tasting, it definitely wasn't a busy night.We've seen staff cleaning empty tables, and chatting just behind us, but nobody seemed to care for us.As we left and looked back, they'd already cleared the menus off our table.Pretty lame.

Nevertheless to say, Evolve is the coolest bar I have ever seen. Numerous of authentic fossils prove this bar owner’s taste, let alone decency of cocktails. I ordered two drinks in the stirred and stiff menu and my wife ordered on in the Built, fruity and refreshing menu. You are also able to find one drink close to your heart in the 100ish-page wine/spirit menu. We enjoyed the last night behind the ancient turtle pillar in Hobart during this trip.

Its a 'must go' whisky bar when you are in Hobart. Its like whisky wikipedia , also got a variety of gin, cocktails. The decoration is also quite unique.

Evolve Spirits Bar
The theme of fossils, you can feel time, history and mystery there, it’s cool, special and distinctive. The staffs are professional, hospitable and careful, the drink is nice, and the music is beautiful and atmospheric in the air. That was a totally different experience for me, the bar is definitely worth to try in the city.
